Homemade Biscuit Mix
I usually have this Homemade Biscuit Mix in the pantry at all times. It makes it very easy to whip a batch out whenever it is called for.
Ingredients:
6 cups unbleached all purpose flour
3 tablespoons baking powder
1 tablespoon salt
1 cup (2 sticks) butter, soft
3/4 cup rice milk (when ready to make biscuits)
Directions for Homemade Biscuit Mix:
1. Combine flour, baking powder and salt in a large bowl and mix well.
2. Cut in soft butter and mush it into the dry ingredients until particles
are fine.
3. Store in an airtight container at room temperature.
Directions for Baking:
1. For 1 dozen biscuits, preheat the oven to 450 degrees F. On Thanksgiving
Day, I will be making the biscuits last, baking the batch after the
turkey comes out of the oven and is set aside to soak in its juices.
That way, the biscuits arrive at the table hot, just before the family
says grace.
2. In a large bowl, put 2 1/2 cups of Homemade Biscuit Mix. Add rice
milk gradually, stirring constantly until blended.
3. Knead the dough on a lightly floured surface until well mixed.
4. Roll out the dough until it is 1/2 inch thick.
5. Cut into circles with a 2 inch diameter. You can find biscuit cutters
in the baking aisle at your local grocery store, or use a cookie cutter.
6. Arrange the biscuits on a stainless steel baking sheet. Bake until
golden, about 12 to 15 minutes.
